The Auckland Street Food Showcase was designed by young local entrepreneurs from Niesh and Silk Road Eatery to celebrate this diversity.
The Auckland Street Food Showcase brought together 200 students from 36 nationalities to explore how techniques and flavours from around the globe combine to create a uniquely Auckland culinary experience.
Dane Archery, Head Chef, created 11 dishes such as Maori fry bread with Hong Kong style pork filling and Japanese soba noodles with Chilean ceviche to showcase the fusion of familiar and foreign flavours.
Archery is passionate about highlighting the quality and abundance of the fresh produce available locally in Auckland. “Auckland food is essentially international food and that is something we don’t showcase and take pride in enough,” he says. “Creating top quality dishes in Auckland doesn’t mean food has to travel long distances to reach you. There are a lot of great local businesses we can source ingredients from, which is fresher, cheaper and better for the diner and the environment.”
